
laco-fermented ginger beer?
a few websites advise you to use water kefir, organic Sucanats, whey and ginger to make the starter culture. but my question is, does only one ingrediant or all of them contribute to the micro-organism diversity?
so in other words, is the kefir, sucanats, whey and ginger all working togeather to form the SCOBY or is it just one of them that provides all organisms?
It ferments more like yougart does with the cultures and there is no or a very low alcohol content, it also has a bit of sourish taste, I have bought it here in Canada, Make my own ginger beer without the yeast to ferment it, more a ginger syrup and mix it with club soda, I worked in Jamaica, there they brew it like beer, and it can pack a punch, some are knock you over strong, spicy to.
